Probiotics are live microorganisms that, when administered in adequate amounts, confer a health benefit on the host. The probiotic microorganisms most commonly used in the food and pharma industry belong to the genera Lactobacillus and Bifidobacterium. Although several strains of these genera have demonstrated probiotic attributes based on solid scientific evidence, their selection has mainly been accomplished considering their technological performance, including the capacity for biomass formation and the presence of robust phenotypes that guarantee their viability under technological and physiological stress conditions. In practice, this means that the majority of the currently available probiotics have not been selected to treat or prevent specific physiological disorders.
